    These fritters are delicious served warm or at room temperature. The recipe belongs to a young mother whose two children are 3 years of age and 4 months respectively.

    • 2 potatoes
    • 2 carrots
    • 2 zucchini
    • 4 eggs
    • Parmigiano Reggiano cheese
    • 2 tbsp plain flour
    • Salt
    • Black pepper

    1. Wash the vegetables and peel the potatoes. Grate the potatoes, carrots and zucchini; using your hands, squeeze out the excess liquid, which you can use later to make soup or minestrone.
    2. To the vegetables add the grated cheese, eggs, flour, pepper and salt and combine thoroughly. Leave to rest for 15 minutes.
    3. Take a spoonful of mixture and fry over moderate heat.
