A traditional sweet from Trieste.

 

 

• 200g flour
• 100g sugar
• 75g butter
• 1 egg, yolk and white separated
• 1/2 cup milk
• Grated zest of 1 lemon
• 16g baking powder
• 500g apples, peeled and cut into wedges

1. Preheat oven to 180°C. Grease a springform cake tin with butter and line with baking paper.
2. Work the butter and sugar for 10 minutes.
3. Add the egg yolk, then the flour and lemon zest. Stir well.
4. Beat the egg white and add it to the cake mix. Add the yeast.
5. Pour the mixture into the cake tin and decorate with apple wedges.
6. Cover the wedges with sugar.
7. Bake for around 45 minutes or until golden brown.
