• Asparagus (use top halves)
• Cheese slices
• Prosciutto slices
• Parmigiano Reggiano, grated
• Olive oil
1. Wrap each asparagus top with a slice of cheese, then a slice of prosciutto.
2. In a large bowl, beat the eggs with the Parmigiano Reggiano.
3. Dip the asparagus tops in the egg mixture, then coat them in breadcrumbs.
4. In a pan of boiling oil, fry the asparagus tops.
5. Drain on paper towel and serve hot.
