    This hearty soup is popular in Istria, Muggia and Monfalcone.

    Serves 4-6

    • 200g beans
    • 250g potatoes
    • 250g cabbage
    • 1 bay leaf
    • 10 tbsp oil
    • 2 tbsp plain flour
    • Garlic
    • Salt
    • Pepper
    • Cumin

    1. Soak the beans. Cook the beans and potatoes.
    2. In a separate pot, pour enough water to cover the cabbage, cumin and bay leaf and bring to the boil. Simmer until water has reduced completely.
    3. Stir fry the flour in oil and sauté the garlic before adding the cabbage. Stir through and season with salt and pepper.
    4. Pour the cabbage mix into the beans and potatoes, and simmer for another 20 minutes.
    This will take 45 minutes in a pressure cooker. You can omit the potatoes and use cornmeal instead. Add the cornmeal in the last 30 minutes. This version is popular in Istria, Muggia and Monfalcone.
