• 800g octopus, gutted and cleaned
• 1 garlic clove
• 1 lemon
• Extra virgin olive oil
• ½ glass white wine
• Salt and pepper
1. Bring a large pot of lightly salted water with white wine and ½ lemon to the boil. Dunk the octopus in the water and simmer for about an hour or until tender.
2. Mince parsley and garlic, and add to oil, salt, pepper and the juice of the other lemon half to make a dressing.
3. When the octopus is ready, let it steep in the pot, until cooled. Remove the octopus from the pot, drain and cut into small pieces. Coat with the dressing and voilà, our octopus salad is ready!
